A Curry For The Entire Family

This recipe is just to die for! My sister in law Julie sent it to me. It’s the Jools’ easy chicken curry from Jamie Oliver’s book. It is so handy and a great mid week dinner.

I use it without chicken.

What you’ll need:

For the paste:

3 tablespoons of Yoplait Skyr

2 tablespoons of tomato puree

2 tablespoons of tikka masala paste (you can get this in most supermarkets)


Sautee an onion in a pan for about 5-10 minutes on a medium low heat, add some grated ginger and garlic for just a couple of minutes.

Mix the Skyr, tomato puree and masala paste in a bowl and add into the onion, garlic and ginger.

Stir for a minute or two, then add a tin of coconut milk, tin of tomatoes and sprinkle with salt and pepper.

At this point you can add lentils and spinach, veg or chicken. Simmer on a low heat for up to an hour, stirring often.

And there you have it, it really is EASY. Jools is certainly onto something.

I have this on rotation in my kitchen every couple of weeks and Pia LOVES it because it’s not spicy.
