
One of my favourite mid-week meals is Butternut Squash with some green veg and brown rice.
I feel so nourished after eating this, so I thought I’d pop the recipe here, so you can check it out.
Ingredients
- Butternut squashed (halved)
- Brown Rice
- Kale
- Red Pepper
- Asparagus
- Onion
- Garlic
- Sesame Oil
- Brown Sugar
- Sprinkle of Parmesan cheese
- (Grilled Halloumi cheese if you would like to bulk it up)
Firstly, I halve the butternut squash (be careful with your knife during this step and always make sure the knife is pointing away from your body) and scoop out the pips. Mix a tbsp of sesame oil mixed with a pinch of brown sugar. Run your knife over the inside of the squash and rub the oil mixture in.
This will give the squash a beautiful flavour when it’s baking.
Place in the oven and bake for about 35 minutes.
In the meantime, prepare your brown rice and sauté the veg in a tbsp of sesame oil. Mix the rice and the veg together and once the squash is ready you can place your rice mixture on top. I always like to sprinkle with some parmesan cheese or top with some grilled halloumi. Yum yum. Enjoy!
