
BBQ season is in full swing and if you want to cut down on meat but not miss out on the good times, these Grilled Veggie Skewers are the perfect food to prepare.
The recipe gives you ideas for which vegetables to use, but you can go with what you have. Other foods that will work well on these skewers are aubergines, halloumi, marinated tofu.
Tip: If using wooden skewers, soak them in water for 30 minutes before. This will ensure they don’t burn when placed on the BBQ or under the grill.
Makes 5 skewers
Ingredients
1 small courgette
1 red onion
2 red peppers
10 medium sized chestnut mushrooms
1 corn on the cob
5 wooden or metal skewers
Dressing
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 crushed garlic clove
1/2 tsp dried parsley
1/2 tsp dried sage
Salt & pepper
Method
1. Cut the vegetables into regular sized pieces and thread them onto the skewers. The veggies will shrink under the heat so don’t cut the pieces too small.
2. Place on the BBQ or under a hot grill. Leave for about 4-5 minutes on each side.
3. Mix all the ingredients for the dressing in a bowl, then drizzle it onto the grilled vegetables.
