We have an unwritten rule in our house, on Mondays, we eat salmon. We have a local fish shop in our village, and although it can feel like a splurge, I do like to buy organic salmon as much as possible. Why? There are lots of benefits, but mainly because organic salmon typically contains fewer toxins and heavy metals. So instead of having salmon two or three times a week, I’ll buy a higher-quality organic salmon and have it once! When it comes to this dish, you can add whatever veg you like,  but think crunchy – cucumber, cabbage, shredded carrot, fennel, radish, snap peas. You can change it up from season to season, if you prefer to eat seasonal veg. For this recipe, I made a homemade slaw and chopped up some cucumber.

Ingredients

For the Salmon 

  • 2 salmon darnes, cubed with skin on for extra crispiness
  • 1 tbsp olive oil (or avocado oil)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional)

Rice 

  • Sushi rice or short grain rice. Sometimes I take the easy road and buy the steamed rice from the Neon concession in Dunnes Stores.

The Rest/The Topping

  • Avocado is a must for me.
  • Then you can add what you like – a nice fresh slaw made of red and white cabbage with a touch of mayo, mustard, salt, pepper, touch of honey – just google healthy slaw recipe and something nice will come up).
  • Sliced cucumber, radish, shredded carrot. As I said you want the crunch so whatever takes your fancy here.
  • A drizzle of Spicy Mayo on top, or I simply squeezed some lime juice over.

Method

  • Preheat air fryer to 200°C for 3/5 minutes.
  • Pat the salmon dry with kitchen roll, this is key to getting it crispy! I did sprinkle a small spoonful of soy sauce on the salmon before I added the dry ingredients, but it’s up to you.
  • Add the salt, pepper, garlic powder and paprika to the salmon.
  • Place salmon skin-side down in the air fryer basket. Don’t overcrowd, leave space between each cube. If you don’t have an air fryer, you could pan fry it.
  • Keep an eye on it, but I air fried for about 10 minutes.
  • Cook the rice and let it cool slightly, I sprinkled some soy sauce on top once in the bowl, you can also drizzle soy sauce over the salmon if you like it.
  • Add the salmon, cucumber, avocado and slaw to the bowl.
  • Top it off with some spicy mayo, sriracha or lime on top, whatever you fancy.
  • And there you have it, Mondays aren’t so boring after all!
