Summer is here and for me, it means a lot more socialising and eating together with friends and family. I love a glug of olive oil over my dinner, it’s packed full of antioxidants and anti-inflammatory ingredients and I try to incorporate it into my diet as much as possible (more on that soon).
But for now, back to the dip. A lot of supermarket dips are ultra processed, so I like to make homemade dips as much as possible. And they are much tastier and impressive when you have the gang over.
I’ve recently discovered this gorgeous Olive Oil, Garlic and Basil dip that is delicious served with some fresh crusty bread, or drizzled on top of your pasta.
Ingredients
- 1/2 cup of good quality EXTRA VIRGIN Olive Oil (you may need more, add as you need)
- 1/4 cup of parmesan cheese
- 2 cloves of garlic minced
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon chilli flakes
- Handful of basil, finely chopped
- 1/2 teaspoon salt
- Black pepper
Method
Use a shallow dish, like a big bowl. This makes it easier to dip the bread and ensures all the ingredients don’t sink to the bottom of the bowl.
Mix everything together and add more oil, salt, chilli as needed. Go with your gut, that’s half the fun.
Serve with some fresh crusty bread or keep in a jar in the fridge to drizzle over pasta.
