The most delicious Roast Potatoes!
- Preheat the oven to 200°C (180°C fan).
- Use Maris Piper or King Edward potatoes. Peel and cut them into quarters.
- Place the potatoes into a large pot of cold well salted water. (this is key, as when you put them in cold water they will cook from the inside out, as opposed to putting straight into boiling water). Bring to the boil, then simmer for 6 minutes.
- Drain the potatoes and allow them to steam dry for 5 minutes.
- Sprinkle over Tesco Roast Potato Seasoning..this is the magic ingredient. It’s a blend of semolina with herbs and spices and gives the potatoes an amazing crunch.
- Meanwhile, add 2 generous tablespoons of butter and a good glug of olive oil to a baking tray. Place it in the oven so the butter melts and the oil gets hot.
- Carefully add the potatoes to the hot tray (watch for splashes), add some garlic bulbs in their skin and some sprigs of Rosemary. Make sure all sides of the potatoes are well coated in the butter and oil. You can use duck fat if you like – I didn’t.
- Roast for 45 minutes, turning the potatoes every 15 minutes, until golden and crispy. Squeeze the garlic out of the skin with the back of a fork.
