Yaki Udon Noodles

Meal planning has slipped off my ‘to do’ list recently and I must say I miss being organised. I love writing out what meals we will have for the week. It helps me shop efficiently and save on food waste. So back to business this week! This Yaki Udon Noodle dish is so tasty and a beautiful mid-week meal the entire family can enjoy. You can swap out the tofu with chicken or beef too.

Serves 2-3

INGREDIENTS 

  • 1 tbsp peanuts or cashews
  • 1/2 red onion
  • 1 garlic clove
  • 2cm fresh ginger
  • 2 cups stir fry vegetables
  • 1 packet smoked tofu (or replace beef or chicken)
  • 2 cups stir fry vegetables
  • 2 packets udon noodles
  • 2 tbsp dark soya sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp mirin
  • 1 tbsp dark brown sugar
  • 1/2 tsp rice wine vinegar

Optional: 1 red chilli or some chilli sauce

METHOD

  1. Chop the peanut and roast in a hot pan for a few minutes, then set aside.
  2. Heat a large pan or wok to high heat.
  3. Add the oil, then quickly fry the onion, garlic and ginger for 2 minutes. Stir continuously.
  4. Add in the tofu and vegetables. Stir and fry until the vegetables start to soften.
  5. Add in the cooked udon noodles and the sauce. Toss everything together and fry until the noodles are heated through.
  6. Serve with the chopped peanuts on top and some sliced red chillies on the side.
