Do you follow Faithsfresh on Instagram?! If not, you should! She has some brilliant recipes on her page and this week I made her strawberry sticks that are a great alternative for supermarket ice pops. These are a great dessert for a summer BBQ and the adults will love them too.

One thing I will say, they should be made and consumed on the same day as they do not keep well.

So here it goes..

Ingredients

  • Strawberries (the bigger the better, fresh and organic from a stall on the side of the road would be ideal).
  • A nut butter of your choice – I used Almond.
  • Dark chocolate – or milk chocolate if you prefer.

The Add Ons

  • Sprinkles.
  • Chopped up nuts.
  • Think of things that will stick to melted chocolate.

Method

  1. Cut the strawberries sideways (think 2-euro size slices). You want them to be flat so they stick well to the skewers.
  2. Lay the strawberry slices in straight lines on a sheet of greaseproof (parchment) paper, about 4 or 5 slices per line, or as long as you want each skewer to be.
  3. Pour a line of nut butter down the middle of each row of strawberries. This acts as the glue to hold everything together.
  4. Carefully place a skewer on top, pressing it gently into place so it sticks into the nut butter and strawberries.
  5. Place the tray in the freezer for 30 minutes to 1 hour, until everything firms up.
  6. Melt the chocolate gently in a bowl set over a pot of simmering water, stirring until smooth.
  7. Remove the tray from the freezer and quickly pour the melted chocolate over the strawberries. Work fast, the cold strawberries will make the chocolate set quickly.
  8. While the chocolate is freshly poured, sprinkle your toppings over it. (It’s okay if it gets a little messy, that’s the magic of it!)
  9. I chopped up the leftover strawberries into tiny pieces and used them as a topping, but you can also use nuts, sprinkles, or anything you like.
  10. Return the tray to the freezer for another 30 minutes, or until everything is fully set.
  11. Serve immediately from the freezer or store in the fridge for up to a few hours. Best enjoyed the same day.
